Leche frita (fried milk)

The first time you hear the name of this recipe, you’ll probably wonder how you’re supposed to fry milk. Let’s just say that this recipe is, in a certain way, magic, but it’s a sweet magic that we can all learn.

But enough about magic, let’s turn our attention to cooking, which is more important. To make this delicious desert, you’ll just need a few simple ingredients:

Leche Frita
  • 100 g. of sugar
  • 40 g. of corn flour
  • Lemon peel
  • Cinnamon stick
  • Cinnamon powder
  • An egg
  • Oil

Put half of the milk in a pot with the lemon peel and the cinnamon stick. Place it on the burner until the milk begins to boil, then take it off the burner and let it sit for about 20 minutes. Remove the lemon peel and the cinnamon stick. Now dissolve the corn flour in the rest of the milk, and then add it to the milk you’ve already warmed. Place on medium-low heat for half an hour, or until the milk thickens. Add the mix to a mould and put it in the refrigerator for at least 4 hours so it can have time to set.

After that, cut the dough in cubes or rectangles, coat them in flour, dip them in the beaten egg, and fry them in hot oil until they’re golden brown. Remove them and place them on a paper towel to absorb the excess oil and then coat the cubes in a mix of sugar and cinnamon to enhance their appearance.
