Salsa Roja — Made from Chili peppers, tomatoes, onion, garlic and cilantro.

Salsa Cruda — This particular salsa has several different variations, though its main ingredients are tomatoes, onions and chili. Common additions include lemon juice, fresh cucumber and mango. There is a specific type of salsa cruda which is typically eaten with the thumb and forefinger, giving it the name "rooster's beak."

Guacamole — Just like its main ingredient, avocado, guacamole stems from Mexico.
